Bergamot

Bergamot is a citrus fruit, the fruit of the bergamot tree, a cross between bitter orange and lime. Transformed into essential oil, it has many aromatherapy properties: it is antiseptic, antispasmodic, vermifuge, relaxing, etc. Like many citrus fruits, it also has a high vitamin C content to boost your immune defenses against winter illnesses.
With its very particular sweet but sour taste, bergamot candy has a protected Geographical Indication.

Bergamot Crème Brulee Recipe

Bergamotte

Ingredients

  • 40 cl fresh cream,
  • 4 egg yolks,
  • 1 sachet of vanilla sugar and 1 pinch of vanilla powder,
  • 80 g brown sugar
  • 8 bergamots (or 3 drops of natural bergamot flavor)

The recipe

  • Melt the bergamots in 5 cl of liquid cream. Once melted, add the rest of the liquid cream.
  • Heat the cream with the vanilla powder.
  • Beat the egg yolks with the sugar until the mixture turns white.
  • When the cream is simmering, pour it in a thin stream over the previous preparation while stirring.
  • Divide the cream into the ramekins.
  • Bake in a bain-marie at 110°C for 45 to 60 min.
  • To be enjoyed cold. Remember to caramelize with a blowtorch to obtain the crunchiness.
